Easy Oil-free Tomato Sauce
Italian, Lunch
Ingredients
- 1 large ripe tomato, coarsely chopped
- 1 small onion, coarsely chopped
- 5 cloves garlic
- 1/2 teaspoon fresh oregano leaves or 1/4 teaspoon dry
- 10 fresh basil leaves
- 1 cup water
Directions
- Put the tomatoes, onion, garlic and herbs into a small saucepan with the water
- Bring to a boil, lower the heat, cover and simmer for about 10 minutes
- Let the sauce cool
- Pour into a blender and pulse until the vegetables are finely chopped but not pureed
- Pour the blended sauce back into the saucepan and thicken if necessary
- Add salt to taste but this sauce is tangy, only a pinch if any is needed
