Pita Pockets Stuffed with Mushrooms and Salad
Lunch
Serves 1
Ingredients
- Ingredients
- 1 large whole wheat pita bread, sliced in 1/2
- 1 cup of sliced mushrooms
- 1 small onion sliced
- 1 clove garlic minced
- 1 cup organic spring mix salad
- 1/2 cup water or vegetable stock
- sprig of thyme
- Habenero Mustard
Directions
- 1. Slice the pita pocket in 1/2
- 2. Butter with Habenero mustard
- 3. Saute mushrooms, onion and garlic in water or stock with sprig of thyme until soft
- 4. Divide mushrooms and stuff into pockets
- 5. Divide salad and stuff into the pockets
- Enjoy
