Pita Pockets Stuffed with Mushrooms and Salad

Ingredients
  • Ingredients
  • 1 large whole wheat pita bread, sliced in 1/2
  • 1 cup of sliced mushrooms
  • 1 small onion sliced
  • 1 clove garlic minced
  • 1 cup organic spring mix salad
  • 1/2 cup water or vegetable stock
  • sprig of thyme
  • Habenero Mustard
Directions
  • 1. Slice the pita pocket in 1/2
  • 2. Butter with Habenero mustard
  • 3. Saute mushrooms, onion and garlic in water or stock with sprig of thyme until soft
  • 4. Divide mushrooms and stuff into pockets
  • 5. Divide salad and stuff into the pockets
  • Enjoy
