Mango and Blueberry Salad

This is a delicious cholesterol free, high potassium/low sodium fruit salad that can be eaten for breakfast, a snack or dessert. The best time to eat fruits is on an empty stomach at breakfast or for a snack 2 hours after a meal. If you’re eating it for dessert wait for about 2 hours after the meal because the sugars in fruit can ferment the other foods and cause gas/flatulence. Mangoes and blue berries are nutrition power houses. A large mango is 2 servings and 1/2 cup of blueberries is a servings. This recipe provides serves one person with 3 servings of fruit.

  • Ingredients
  • 1 large mango
  • 1/2 cup blueberries
  • 1 teaspoon of flax seed meal (optional)
Directions
  • Instructions
  • Peel and cube the mango and place in bowl
  • Wash blueberries, add to the mangoes and mix.
  • Sprinkle with flax seeds and enjoy!
