Easy Oil-free Tomato Sauce

Easy Oil-free Tomato Sauce Recipe

  • 1 large ripe tomato, coarsely chopped
  • 1 small onion, coarsely chopped
  • 5 cloves garlic
  • 1/2 teaspoon fresh oregano leaves or 1/4 teaspoon dry
  • 10 fresh basil leaves
  • 1 cup water
  • Put the tomatoes, onion, garlic and herbs into a small saucepan with the water
  • Bring to a boil, lower the heat, cover and simmer for about 10 minutes
  • Let the sauce cool
  • Pour into a blender and pulse until the vegetables are finely chopped but not pureed
  • Pour the blended sauce back into the saucepan and thicken if necessary
  • Add salt to taste but this sauce is tangy, only a pinch if any is needed
